This sharp fillet knife has a long, narrow 8-inch blade in 1095 steel with a black finish, set in a gray canvas Micarta handle. At 13 inches overall, it gives you plenty of reach along a fish's backbone. The slim blade narrows to a fine point for starting cuts behind the gills.
As a fillet knife for fish, it handles the whole job at the cleaning table or kitchen counter. You can lift fillets off the frame, slide under the skin and trim away belly fat and pin-bone strips. The same narrow blade also works for removing silver skin from pork tenderloin or trimming chicken breasts.
As a high carbon steel fillet knife, 1095 takes a keen edge and is easy to touch up on a stone. Carbon steel rusts if it's left wet. After saltwater use, rinse it in fresh water, hand wash it, dry it right away and wipe on a light coat of food-safe oil. The 5-inch Micarta handle is a composite of fabric layers set in resin. It's fixed with three pins and has a lanyard hole.
