A dark, textured blade and a bright polished edge bevel give this kiritsuke knife two clear tones along its 7-inch length. It is 12 inches overall with a 5-inch handle, and it comes as a handmade chef knife with sheath.
The flat edge and angled tip are the kiritsuke shape. The blade is 1095 steel, a plain high carbon steel that can rust if it is left wet. As a high carbon steel chef knife, it should be wiped dry after every use and given a light coat of oil.
The handle is dark wood, cut in an octagonal shape, with a brass-tone ferrule and a thin silver spacer ring below it. Wood grain varies, so each handle looks a little different.
The sheath is black tooled leather with red stitching, a hair-on hide accent and a snap strap. See more handmade blades in our chef knives and kitchen knives collections.
