Built for the cleaning table, this custom hand forged Damascus steel fillet knife carries a 9-inch blade on a 5-inch wood handle, for a 14-inch overall length. The long, narrow blade suits filleting fish and trimming meat, and the forged Damascus shows a layered pattern that runs the full length of the steel, so no two knives look exactly alike.
The wood handle gives the knife a warm, traditional look. To keep it in good shape, wash the knife by hand and dry it right away instead of leaving it to soak or putting it in the dishwasher. Most Damascus blades contain carbon steel, so a quick wipe after cleaning fish and a thin coat of oil before storing will help protect the pattern.
