This long, narrow sujihiki knife has a pointed 12-inch 440C blade. A darker, textured band runs along the spine, and the face below it is brushed bright. With the octagonal black Micarta handle, it measures 18 inches overall, long enough to finish most cuts in one smooth pull.
Its slim, low blade puts less steel in contact with the food as you slice, which is the idea behind a sujihiki slicing knife. Use it on rested prime rib, smoked brisket, glazed ham or roast turkey breast for even portions. It also works on sides of salmon and tuna loins, and the fine tip lets you start a cut precisely or trim around bone.
A 12 inch slicing knife makes sense for wide cuts, because shorter blades run out of edge halfway across a big roast. It also works as a sujihiki carving knife at the table. The 6-inch Micarta handle has metal spacer rings and a polished collar at the blade. 440C is a high-carbon stainless steel, so wipe the blade between slices and wash it by hand when you're done carving.
