This meat slicing knife has a 9-inch 1095 steel blade with a dark stonewashed finish, a straight spine, a long, gently sloping edge and a fine point. With its black canvas Micarta handle and brass-lined pins, it measures 14 inches overall.
The blade is narrower than a chef knife but sturdier than a fillet knife, so it suits steady work on both cooked and raw cuts. Slice smoked pork loin, flank steak or roast chicken, or cut between the bones on a rack of ribs, then use the point to free meat from the bone. It works as a carving and slicing knife at the dinner table and as a trimming blade during prep.
As a carbon steel slicing knife, 1095 is easy to sharpen and will darken with use. The stonewash finish already gives it a worn, low-glare look. Rinse it after cutting, dry it straight away and wipe on a thin layer of food-safe oil to prevent rust. The 5-inch handle has a textured canvas grain, a thin red liner where it meets the blade, and a brass-lined lanyard hole.
