This kitchen chef knife has a wide, tall-heeled 7-inch 440C blade. Deep hammer marks run along the upper third, and the rest of the blade has a brushed satin finish down to the edge. At 12 inches overall, it handles easily on a standard cutting board and suits cooks who find an 8-inch blade a little long.
The curved belly lets you rock through herbs and garlic. The flatter section near the heel handles push cuts through onions, peppers and carrots, which makes it a capable chef knife for chopping. You can use the broad blade to scoop prep from the board to the pan, and the fine point for trimming fat or scoring meat.
As a stainless steel chef knife, 440C resists staining from tomatoes and citrus better than plain carbon steel. It's still best to wash it by hand and dry it after use. The 5-inch black Micarta handle has a faceted, chiseled surface and is secured with three hex fasteners.
You'll find more blade shapes in our chef knives collection.
