This kiritsuke knife has an 8-inch 440C blade with a two-tone finish. A dark, textured band runs along the spine, and the lower face is brushed bright down to the edge. The angled, clipped tip and long, flat edge give it the classic kiritsuke profile. It's set on a 5-inch octagonal wood handle, for 13 inches overall.
The flat edge stays in full contact with the board, so push cuts and slicing strokes come out even. It's built for jobs like cutting carrots and leeks into thin strips, slicing cucumbers paper thin, or drawing through a chicken breast or fish loin. The angled tip handles tight work like scoring, trimming and fine garnishes. With very little belly, it suits cooks who slice and push rather than rock.
As a kiritsuke chef knife in 440C, a high-carbon stainless steel, the blade resists staining from everyday produce. Hand wash and dry it instead of using the dishwasher. The wood handle has a striped grain, with light and dark spacers and a metal collar where it meets the blade. Keep the wood dry and wipe on a little oil now and then.
